Ingredients

2 lbs boneless, skinless chicken breasts
1 cup plain yogurt
2 tbsp lemon juice
2 tsp ground cumin
2 tsp paprika
2 tsp garam masala
1 tsp salt
1/2 tsp black pepper
1/2 large onion, finely chopped
4 garlic cloves, minced
1 tbsp grated fresh ginger
2 tbsp unsalted butter
1 can (14 oz) crushed tomatoes
1 cup heavy cream
1/2 tsp cayenne pepper
Salt and pepper, to taste
Basmati rice, for serving
Naan bread, for serving
Chicken tikka masala is a popular Indian dish that features marinated chicken skewers in a creamy tomato curry sauce. The chicken is marinated in a mixture of yogurt and spices, then baked until tender and juicy. The tomato cream curry sauce is decadent and savory, with deep flavors from ginger, garlic, and garam masala. This dish is perfect for a cozy night in or for entertaining guests.

Instructions

1.In a large bowl, combine the chicken, yogurt, lemon juice, cumin, paprika, garam masala, salt and black pepper. Mix until well coated and marinate in the refrigerator for at least one hour, or overnight.
2.Preheat the oven to 375°F. Thread the chicken onto skewers, discarding the marinade. Place the skewers on a baking sheet and bake for 18-20 minutes, or until cooked through.
3.In a large skillet over medium heat, melt the butter. Add the onion and sauté until translucent, about 5 minutes. Stir in the garlic and ginger and sauté for 1 more minute.
4.Add the crushed tomatoes to the skillet and simmer for 10 minutes, stirring occasionally. Stir in the cream and cayenne pepper and simmer for an additional 5 minutes. Season with salt and pepper, to taste.
5.Serve the chicken tikka masala with basmati rice and naan bread.
