Ingredients

1 whole chicken ( on the bone )
1 can green chilies
6 ounces sliced black olives
1 white onions or 1 yellow onion
1 1 lb monterey jack cheese or 1 lb longhorn cheese
12 ounces sour cream
3 dozen small flour tortillas
1 teaspoon salt
vegetable shortening

Instructions

1.Boil chicken in a large pot with enough water to cover the chicken and 1 tsp salt.
2.Shred the chicken and combine it with sliced onions, half of the can of chilies, half of the sliced black olives, and 8 oz of grated cheese.
3.Melt a spoonful of shortening in a skillet and cook the flour tortillas until they're pliable.
4.Spread sour cream on each tortilla and add the chicken and cheese mixture.
5.Roll up the tortillas and place them in a baking dish with the seam side down.
6.Top the enchiladas with the remaining chilies, olives and cheese.
7.Bake the enchiladas uncovered for 30 minutes at 350 F (175 C) until the cheese is melted and bubbly.
