12 ounces canned chicken breasts ( or 1 large cooked chicken breast )
3 ounces shredded cheddar cheese
1 avocado , diced
1/2 medium onion , diced
1 cup corn ( frozen or canned )
1 large roma tomato , diced and seeded
4 leaves lettuce , sliced into shreds
3 tablespoons salsa
1/2 lime
salt and pepper
2 teaspoons taco seasoning
1/2 jalapeno , seeded and diced fine
4 flat bread ( or 8 bread slices )

Instructions

1.Begin with draining the canned chicken breasts (If using chicken breasts, cook it and shred it).
2.Cut onion, tomato, jalapeno and avocado and mix in a bowl.
3.Add salt, pepper, lime juice to the mixture and set aside.
4.In a large mixing bowl, combine the chicken, cheese, salsa, taco seasoning, corn, and the onion, tomato, jalapeno and avocado mixture and mix well.
5.Halve each flat bread (or slice bread slices) to create pockets.
6.Fill each pita pocket or bread slice with chicken salad mixture.
7.Garnish it with shredded lettuce.
