Instructions

1.In a large pot, bring chicken broth, roasted garlic, and oregano to a boil.
2.Add in the rotel, diced onion, sliced jalapeno peppers, diced bell pepper, frozen corn, drained & rinsed black beans, and quinoa.
3.Reduce heat to a simmer and allow to cook for 30 minutes.
4.Add in sliced & broiled onion, quartered baby portabella mushrooms, and cooked & shredded chicken breast.
5.Serve hot, topped with toasted flour tortilla slices, shredded Mexican cheese, diced avocado, and a dollop of sour cream.
