Ingredients

1/3 cup achiote paste
1/4 cup white wine vinegar
1/4 cup olive oil
1/4 cup freshly squeezed orange juice
1/4 cup pineapple juice ( Frozen just OK , fresh is much better )
2 tablespoons finely diced yellow onions
1 tablespoon minced garlic
2 teaspoons kosher salt
1/4 teaspoon white pepper
1 bay leaf
1/4 cup paprika
2 teaspoons cayenne pepper
2 tablespoons kosher salt
2 teaspoons white pepper
2 tablespoons black pepper
2 tablespoons granulated garlic
1 tablespoon chili powder
2 tablespoons Mexican oregano
2 lbs boneless skinless chicken breasts

Instructions

1.In a small bowl, whisk together the achiote paste, white wine vinegar, olive oil, orange juice, and pineapple juice.
2.Add the yellow onions, minced garlic, kosher salt, white pepper, bay leaf, paprika, cayenne pepper, kosher salt, white pepper, black pepper, granulated garlic, chili powder, and Mexican oregano to the bowl. Whisk until well combined.
3.Cut the chicken breasts into strips and add them to the bowl. Mix until the chicken is well coated with the marinade.
4.Allow the chicken to marinate in the refrigerator for at least 2 hours, or overnight.
5.Preheat a grill or grill pan to medium-high heat. Remove the chicken from the marinade and grill for 8-10 minutes, or until cooked through. Serve with warm tortillas, grilled onions and peppers, and your favorite toppings.
