1 large garlic clove , minced
1 can petite diced tomatoes , drained ( reserve 1 c. liquid )
1 yellow onion , diced
2 teaspoons salt , divided
1/2 teaspoon oregano
2 chicken breasts , cooked and diced ( about 1 lb . )
1 cup sour cream
6 ounces shredded cheddar cheese
1/3 cup vegetable oil
16 corn tortillas

Instructions

1.Preheat oven to 350°F.
2.Heat 2 Tbsp vegetable oil in a large frying pan. Add garlic and cook for 1 minute.
3.Add onion and cook for 3-5 minutes until slightly translucent.
4.Add green chilies, drained tomatoes, and 1 tsp salt with the reserved tomato liquid, stir to combine. Reduce heat and let simmer for 10-15 minutes.
5.Mix together cooked chicken, sour cream, shredded cheese, 1 tsp salt, and oregano in a bowl.
6.Heat ⅓ cup vegetable oil in a separate frying pan. Fry the tortillas one at a time in the hot oil for 10 to 15 seconds on each side or until golden brown.
7.On a plate, fill the middle of each tortilla with the chicken mixture, then roll tortillas to enclose filling. Place in a greased 9x13 inch dish. Pour the green chili sauce over the enchiladas.
8.Bake for 25-30 minutes or until the cheese is melted and bubbly. Serve hot.
