4 cups chicken broth ( One Box )

Instructions

1.In a large pot, add chicken breasts and enough water to cover them completely. Season with salt, pepper, and cumin and bring to a boil.
2.Reduce heat to low and simmer for 20-25 minutes or until chicken is cooked through. Remove chicken from pot and shred it with a fork.
3.In the same pot, add celery, green bell pepper, white onion, corn, cilantro, jalapeno pepper, and chipotle chiles in adobo and sauté over medium heat for 5-7 minutes.
4.Add crushed tomatoes and chicken broth to the pot, stirring well. Bring to a boil, then reduce heat to low and let simmer for 30 minutes.
5.Add the chicken back to the pot and cook for an additional 10 minutes.
6.Serve with freshly sliced avocado and tortilla chips if desired.
