1 tomatoes , sliced thin
1 white onion , sliced thin
1/4 cup olive oil

1/2 cup water
1 shallot
2 garlic cloves
1 small onion , diced
1 vanilla bean
2 cups black coffee

This Top Chef recipe features bacon-wrapped chicken rolls, stuffed and covered with mojo criollo marinade. It is complemented with basmati rice and G sauce. The G sauce has a kick of spice from the habaneros which is balanced by the addition of tomatillos, creating a deliciously tangy and slightly sweet flavor. Instructions

1.Preheat oven to 400°F.
2.In a large bowl, combine sliced tomatoes, sliced onions, olive oil, salt, pepper, and thyme leaves. Set aside.
3.Pound the chicken breasts until they are thin and even. Lay each chicken breast flat and place a slice of bacon on top.
4.Roll the bacon and chicken together tightly, securing with toothpicks.
5.Brush the mojo criollo marinade on each chicken roll.
6.In a medium saucepan, toast basmati rice over low heat, add saffron, then add twice as much water as rice. Cook rice according to package instructions.
7.In a blender, combine tomatillos, green peas, quartered tomatoes, diced onion, habaneros, white vinegar, water, garlic cloves, and salt. Blend until smooth to form G sauce.
8.In a medium skillet, cook diced onion over low heat until translucent. Add vanilla bean and black coffee. Increase heat and reduce to a syrup.
9.Add molasses and cook until thick, then mix with cornstarch and whisk.
10.Heat a cast-iron skillet over high heat. Add chicken rolls and sear on all sides until crispy. Transfer skillet to the oven and bake until cooked through, about 20-25 minutes.
11.Distribute rice and G sauce on plates. Top with chicken rolls. Drizzle coffee G sauce on top of chicken.
