1 lime
1 purple onion
3 large tomatoes or 5 medium tomatoes
1 hungarian wax chile
2 serrano peppers
2 lbs chicken breasts
3 tablespoons butter or 3 tablespoons margarine
1 fluid ounce tequila
1/4 cup fresh cilantro leaves

Instructions

1.Squeeze the juice of 1 lime into a bowl.
2.Finely chop 1/2 of purple onion, and add to the lime juice in the bowl.
3.Dice 2 large tomatoes or 4 medium tomatoes, add to the onion and lime juice in the bowl.
4.Seed and finely chop the hungarian wax chile and 1 serrano pepper, add to the bowl.
5.Add 1/4 cup of fresh cilantro leaves to the bowl, mix salsa well.
6.Preheat oven to 400°F (200°C).
7.In a pan, heat 3 tablespoons butter/margarine. Add the remaining 1/2 of purple onion, sauté for 5 minutes or until tender.
8.Add 2 lbs of boneless, skinless chicken breasts to the pan, sauté for 20-25 minutes until fully cooked.
9.Add 1 fluid ounce of tequila to the pan. Cook for 2-3 moreminutes.
10.Top chicken with salsa. Enjoy!
