Bolero chicken soup is a hearty and flavorful soup that originated in New Mexico and Texas. The name 'Bolero' comes from the Spanish word for ballad, which indicates that this soup is meant to be savored slowly and enjoyed with loved ones. It is often served during the winter months when the weather turns chilly, and you crave something warm and comforting. The soup is made by marinating chicken breasts in a flavorful blend of herbs, spices, and lime juice and then simmering them with vegetables and broth. The final result is a rich and fragrant soup that tastes even better the next day.
