Ingredients

1 whole chicken
2 tbsp olive oil
2 tbsp fresh lemon juice
2 garlic cloves, minced
1 tbsp chopped fresh rosemary
1 tbsp chopped fresh thyme
1/2 tsp salt
1/4 tsp black pepper
1 lemon, sliced

Instructions

1.Preheat oven to 400°F (200°C).
2.Rinse chicken inside and out and pat dry with paper towels.
3.In a small bowl, mix together olive oil, lemon juice, garlic, rosemary, thyme, salt, and black pepper.
4.Rub mixture all over the chicken and inside the cavity.
5.Place lemon slices inside the cavity and tie the legs together with kitchen twine.
6.Place chicken in a roasting pan and roast for about 1 hour and 30 minutes or until the internal temperature reaches 165°F (75°C).
7.Let the chicken rest for 10 minutes before slicing and serving.
