2 tbsp olive oil | |
2 tbsp fresh lemon juice | |
2 garlic cloves, minced | |
1 tbsp chopped fresh rosemary | |
1 tbsp chopped fresh thyme | |
1/2 tsp salt | |
1/4 tsp black pepper | |
1 lemon, sliced |
1. | Preheat oven to 400°F (200°C). |
2. | Rinse chicken inside and out and pat dry with paper towels. |
3. | In a small bowl, mix together olive oil, lemon juice, garlic, rosemary, thyme, salt, and black pepper. |
4. | Rub mixture all over the chicken and inside the cavity. |
5. | Place lemon slices inside the cavity and tie the legs together with kitchen twine. |
6. | Place chicken in a roasting pan and roast for about 1 hour and 30 minutes or until the internal temperature reaches 165°F (75°C). |
7. | Let the chicken rest for 10 minutes before slicing and serving. |
