Ingredients

12 ounces Cotija cheese , crumbled
4 cups cooked chicken , shredded
24 corn tortillas
8 roma tomatoes , chopped
2 tomatillos , chopped ( optional )
1 red onion , chopped
1 cup fresh cilantro , chopped
1 -2 jalapeno chile , seeded , deveined , minced
1 teaspoon Mexican oregano ( not as sweet as Mediterranean )
4 tablespoons olive oil
salt , to taste
fresh ground black pepper , to taste
Chicken Taquitos with Warm Tomato Salsa is a delicious and easy Mexican dish that is perfect for any occasion. These crispy baked taquitos are filled with succulent chicken and cotija cheese, then paired with a warm, spicy tomato salsa. The taquitos are quick and easy to make, and can be served as an appetizer or as the main course, accompanied by rice and beans. The tomato salsa is the perfect complement to the crispy and rich flavors of the taquitos, providing a burst of zesty freshness with every bite.

Instructions

1.Preheat oven to 400°F.
2.Heat 1/2 inch of oil in a large pan over medium heat.
3.Soften corn tortillas, in small batches, for 10-15 seconds each side, until pliable.
4.Lay tortilla flat, spoon 1 Tbsp. Cotija cheese and 2 Tbsp. shredded chicken down center of tortilla.
5.Roll tightly, then secure with 1 toothpick on each end to prevent the insides from spilling out.
6.Repeat filling and rolling process until all tortillas have been used.
7.Add the jalapeno and onion to the pan with the oil, stir-fry for 2-3 minutes, then add tomatoes and tomatillos (if using) and stir-fry for an additional 2-3 minutes until the tomatoes and tomatillos are tender.
8.Add cilantro just before removing from heat.
9.Place taquitos into oven and bake for 10-15 minutes, turning once, until crispy and golden brown. Serve with warm tomato salsa.

PROS

Chicken taquitos are a crispy and flavorful addition to any meal or a great appetizer for a party.
