Instructions

1.Rinse the dried red chile pods and remove the stems and seeds. Boil them in a large pot of water until they are tender.
2.In a blender, puree the onions, garlic cloves, and boiled red chile pods until smooth.
3.In a large pot, cook the chicken breasts until they are browned. Pour in the pureed chile mixture and add the hominy, garlic powder, onion powder, chili powder, ground cumin, and salt and pepper to taste.
4.Add hot water if needed to cover the chicken. Bring to a boil and then reduce heat, simmer until the chicken is cooked through.
5.Once the chicken has cooked, remove it from the pot and shred it. Put it back in the pot and cook for another 15 minutes.
6.Top with shredded lettuce, tortilla chips, and a squeeze of lemon juice before serving.
