1 1/4 lbs chicken , cubed
1 medium onion , diced
2 tablespoons all-purpose flour
1/2 cup evaporated skim milk
2 tablespoons evaporated skim milk

2 tablespoons chopped cilantro

1 1/2 cups water

1/2 cup egg substitute
3 ounces shredded gouda cheese or 3 ounces other cheese

Instructions

1.Preheat oven to 375 degrees Fahrenheit
2.Spray an 8x8 inch baking dish with nonstick cooking spray and set aside.
3.In a large saucepan, add 1 1/2 cups of water and 1/2 teaspoon of salt. Bring the mixture to a boil, then reduce heat to low and add grits. Cook and stir constantly for 5-7 minutes or until thickened.

5.In a skillet over medium-high heat, cook the chicken and onion until chicken is no longer pink and onion is translucent. Drain the fat from skillet.
6.Sprinkle flour over chicken and onion and stir well. Stir in 1/2 cup of evaporated skim milk, low-fat sour cream, corn, diced tomatoes, cilantro, cayenne pepper, and salt, cook until heated through and thick.
7.Pour chicken mixture into the prepared baking dish. Spoon grits mixture over the top and spread evenly to the edges of dish.
8.Bake the dish for 15-20 minutes or until the top is golden brown.
