Ingredients

1 cup dried lentils
1 onion, chopped
2 cloves garlic, minced
2 carrots, chopped
2 celery stalks, chopped
4 cups vegetable broth
1 can diced tomatoes
1 tsp cumin
1 tsp paprika

Instructions

1.Rinse lentils and set aside.
2.Heat oil in a large pot, add onion and garlic and cook until softened.

5.Bring to a boil then reduce heat and simmer for 30 minutes or until lentils are tender.
6.Use a blender to puree half of the soup, then return to the pot.
7.Serve hot.
