Ingredients

2 large chicken breast halves
1 ounce olive oil
4 ounces diced jalapenos
1 can stewed tomatoes
1 can refried beans
12 -16 flour tortillas ( I use Homemade Tortillas )
2 cups shredded cheddar cheese or 2 cups shredded nacho cheese

Instructions

1.Preheat oven to 350 degrees F.
2.Cook the chicken breasts until fully cooked and slice them into small pieces.
3.Heat the olive oil in a large skillet over medium heat.
4.Add the chicken pieces and jalapenos to the skillet and cook until heated through.
5.Add the stewed tomatoes and refried beans to the skillet and stir until well combined.
6.In a separate skillet over medium heat, cook the tortillas until slightly browned on each side.
7.Place a tortilla on a baking sheet, top with 1/4 cup of the chicken and bean mixture, and sprinkle with 1/4 cup of the shredded cheese.
8.Cover with another tortilla and repeat for the remaining tortillas.
9.Bake in the preheated oven for 10-15 minutes or until the cheese is melted and bubbly.
