Ingredients

3 boneless skinless chicken breasts
1 packet taco seasoning
2 cups water
8 whole grain tortillas
1 cup low-fat cheddar cheese , shredded
1 cup low-fat Mexican cheese blend , shredded
1 can black beans , drained
1 cup corn , cooked
1/2 cup chopped red onion
1 cup chopped tomato , divided
2 tablespoons chopped cilantro
1/2 teaspoon salt
1 tablespoon lime juice
1 cup lettuce , shredded
1 avocado , diced
1 cup light sour cream
This recipe is a flavorful twist on classic chicken tacos that are usually fried. The chicken is baked and seasoned with taco seasoning, then shredded and stuffed in whole grain tortillas. Instructions

1.Preheat the oven to 375°F.
2.Season the chicken with taco seasoning and place them in a baking dish.

11.Add a tablespoon of black bean salsa to each tortilla.
12.Sprinkle 1/8 cup of shredded low-fat cheddar cheese and 1/8 cup of shredded low-fat Mexican cheese blend over each taco.
13.Bake the tacos in the oven for 10-12 minutes or until the cheese is melted and bubbly.
14.Remove the tacos from the oven and sprinkle each with shredded lettuce and diced avocado on top.
15.Serve the tacos hot with a dollop of light sour cream on each and the remaining black bean salsa on the side.
