Ingredients

1 whole chicken , cut up
2 tablespoons olive oil
1 large onion
3 stalks celery ( with tops )
3 carrots

1 can crushed tomatoes
2 garlic cloves , chopped

1 tablespoon thyme
1 teaspoon coriander
1 -2 fresh jalapeno , seeded and chopped
corn tortilla strips , deep fried
shredded cheese
chopped cilantro
sour cream
avocado , sliced

Instructions

1.In a large pot, sauté the chicken in olive oil until browned.
2.Remove chicken and set aside.
3.In the same pot, sauté the onion, celery, and carrots for 5 minutes.
4.Add the can of crushed tomatoes, chopped garlic, and jalapenos, and sauté for another 5 minutes.
5.Add the chicken back to the pot and pour in enough water to cover the chicken.
6.Add the cumin, oregano, thyme, coriander, salt, and pepper.
7.Bring to a boil, then reduce heat and let simmer for 1 hour.
8.Remove chicken, and shred the meat off the bone. Discard the bones and return the meat to the soup.
9.Serve hot, topped with deep-fried tortilla strips, shredded cheese, chopped cilantro, sour cream, and sliced avocado.
