2 onions , chopped
2 garlic cloves , minced
2 poblano chiles , seeded and diced
6 tomatoes , blanched and chopped

1 jalapeno pepper , chopped

1 teaspoon/ 5 ml ground cumin
1/4 cup/ 60 ml chicken broth
2 sprigs fresh thyme
2 sprigs fresh marjoram
2 tablespoons/ 30 ml butter
1 tablespoon/ 15 ml canola oil

2 lobsters , cooked and shelled , meat chopped ( or the equivalent of 3 pounds )
salt & freshly ground black pepper
8 eggs
2 tablespoons/ 30 ml milk
salt & freshly ground black pepper
1 tablespoon/ 15 ml canola oil
1 cup/ 250 ml shredded monterey jack cheese
tortilla , warmed , for serving

Instructions

1.In a large skillet, heat canola oil over medium heat. Add onions, garlic and poblano peppers, cook and stir until onions are translucent.
2.Add tomatoes, salt, black pepper, guajillo and jalapeno peppers, cloves, cumin, chicken broth, thyme, marjoram. Cook and stir until the mixture is thick and bubbly.
3.In another skillet, melt butter with canola oil over medium heat. Add minced garlic and cooked lobster meat. Cook and stir until the lobster is heated through. Season with salt and black pepper.
4.In a small bowl, whisk together eggs, milk and salt and pepper to taste. Heat canola oil in a large non-stick skillet over medium heat. Add egg mixture and cook until bottom is golden brown and top is almost set.
5.Sprinkle shredded Monterey jack cheese and cooked lobster mixture over half of the omelette. Fold the other half of the omelette over the filling. Serve with a warm tortilla on the side.
