1 sweet red pepper , cut into 24 julienne sticks

1 package Simply Potatoes Traditional Mashed Potatoes
2 cups sour cream
1 teaspoon chili pepper
1 teaspoon cumin
3 teaspoons taco seasoning
1 tablespoon lime juice

Instructions

1.Preheat oven to 375°F.

10.Add another 1/4 cup cheese on top of each tortilla.
11.Top each quesadilla with a remaining tortilla.
12.Bake for 10-15 minutes or until the cheese is melted and the tortillas are crispy.
13.Cut each quesadilla into 4 pieces and serve hot.
