Ingredients

1 lb pork
2 lbs ground beef

6 cups masa harina flour or 6 cups cornmeal
broth or water
1 tablespoon baking powder
1 1/4 salt
2 tablespoons , chille power
1 1/4 cups lard or 1 1/4 cups vegetable oil

Instructions

1.In a large bowl, combine the pork, ground beef, tomato sauce, salt, pepper, cumin, red cayenne pepper, chopped bell pepper, chopped onion, and minced garlic.
2.Add enough cornmeal or cornmeal flour mixture to form a thick and moist mixture.
3.In a separate bowl, whisk together the masa harina flour or cornmeal with broth or water to form a soft dough. Add baking powder, salt, and chili power in to make a soft dough.
4.Take some of the dough in your hand and flatten it to form a rectangular shape.
5.Spoon some of the meat mixture onto the center of the dough and roll the dough lengthwise, enclosing the meat.
6.Wrap the roll in corn husks and tie the ends with kitchen twine.
7.Place the wrapped tamales in a steamer and steam for 1 1/2-2 hours.
8.Let the tamales rest for 10 minutes before serving.
