1 1/2 cups self-rising flour
1/4 cup confectioners ' sugar
1 pinch cardamom ( optional )

Instructions

1.Preheat the oven to 350°F/180°C and line the cupcake tins with cases.
2.Beat the sugar and margarine in a large bowl until smooth and creamy. Add the eggs and mix well.
3.Add cinnamon, ginger, and flour, and mix together.
4.Spoon the mixture into the cases, filling each one about two-thirds full.
5.Bake for 12-15 minutes in the preheated oven until risen and golden-brown.
6.Remove the cakes from the oven and transfer them to a wire rack. Allow them to cool down.
