Ingredients

4 -5 lbs chuck roast or 4 -5 lbs arm roast
1 package taco seasoning
1 onion , sliced
1 beef bouillon cube , dissolved in
1/4 - 1/2 cup water
refried beans
enchilada sauce
shredded Mexican blend cheese ( or Co-Jack )
flour tortillas or corn tortilla

Instructions

1.Place the sliced onion on the bottom of a slow cooker.
2.Rub the taco seasoning all over the chuck roast, then place on top of the onions.

5.Remove the roast from the slow cooker and shred with two forks.
