Ingredients

1 lb pork shoulder ( I used 2 lbs )
2 bay leaves
3 garlic cloves , 2 crushed and 1 chopped
1 1/2 lbs about 7 plum tomatoes , halved lengthwise , cored and sliced
2 tablespoons olive oil
1 lb fresh mexican chorizo sausage , casing removed
1 onion , sliced
1 teaspoon salt
adobo sauce , from canned chipotles
2 canned chipotle chiles
1/2 teaspoon dried oregano
2 sprigs fresh thyme , leaves removed from stem ( I used 1/4 tsp . dried )
2 sprigs fresh marjoram , leaves removed from stem ( I used 1/4 tsp . dried )
1 sprig cilantro

Instructions

1.Preheat oven to 300 degrees F
2.Generously season the pork with salt and pepper and place it in an oven-proof Dutch oven.
3.Add the bay leaf and 2 crushed garlic cloves to the Dutch oven, then cover with a lid.
4.Bake the pork in the preheated oven for 2 to 3 hours, or until the meat falls apart.
5.Meanwhile, in a large pan, heat 2 tablespoons of olive oil and cook the chorizo sausage along with the onion and chopped garlic over medium heat until the sausage is browned and cooked through.
6.Add the sliced tomatoes, salt, adobo sauce, canned chipotle chiles, dried oregano, fresh thyme, and fresh marjoram to the pan and stir to combine.
7.Cover the pan and cook for 10 to 15 minutes, stirring occasionally.
8.Once the pork in the Dutch oven is fully cooked, remove it from the oven and discard the bay leaves and garlic cloves. Shred the pork into bite-sized pieces.
9.Add the pork and any accumulated juices to the pan with the tomato sauce, then stir to combine.
10.Simmer the stew over low heat for 10 to 15 minutes, or until everything is heated through and the flavors have melded together.
11.Serve the stew hot, topped with a few crushed tortilla chips and a dollop of crema if desired.
