Ingredients

6 chilies , medium size Anaheim Chiles or 6 pablano chilies
12 ounces monterey jack cheese
1/2 cup all-purpose flour
1 tablespoon butter or 1 tablespoon margarine
3 tablespoons onions , chopped
1 garlic clove , minced
1 can tomato puree
1/4 teaspoon dry oregano
salt
4 eggs
1 teaspoon salt

Instructions

1.Preheat the oven to broil.
2.Roast the chilies on the broil until the skin blisters and blackens.

4.Remove the chilies from the bag and carefully peel the skin off, leaving the stem intact.
5.Cut a small slit in each chili and remove the seeds and membranes.
6.Cut the cheese into strips and stuff one or two strips into each chili.
7.In a skillet, melt the butter and sauté the onions and garlic.
8.Add the tomato puree, oregano, and salt.
9.Simmer for 10 minutes, then remove from heat.
10.In a bowl, separate the egg yolks and whites. Beat the egg whites until stiff peaks form, then fold in the yolks and salt.
11.Heat oil in a skillet on medium-high heat. Dip each chili in the flour, then coat in the egg mixture.
12.Fry the chilies in the skillet until golden brown on each side.
13.Serve hot with tomato sauce on top.
