Pumpkin Tamales are a beloved Mexican dish that is enjoyed for their delicious flavors and unique texture. The sweet pumpkin puree and warm spices create a perfect balance of flavors in each bite. These tamales are perfect for a quick and hearty lunch or dinner, and can be easily adapted to suit different tastes. They are also a great way to use up leftover pumpkin puree, so you don't waste any food. They are a labor of love to make, but the end result is worth it!

Instructions

.In a large bowl, mix masa harina flour, sugar, ground cinnamon, and ground mace.
.Add vanilla extract, pumpkin puree, raisins, and enough water to moisten the mixture (around 10-12 cups).
.Mix until the dough is soft and spreadable, but not too wet.
.Soak the corn husks in warm water for 10-15 minutes.
.Take a soaked corn husk and spread a tablespoon of the dough onto it. Flatten the dough slightly and add more of the mixture as needed. Leave a border to be able to fold the husk into a tamale.
.Roll the corn husk tightly around the dough and fold the end towards the center. Tie the tamale using more corn husk.
.Repeat with the remaining corn husks and dough.
.Steam the tamales vertically, opening side up, for around 1 hour or until cooked. Serve hot and enjoy!
