Ingredients

3 quarts tomatoes

3 chipotle chiles in adobo , seeded
3 jalapenos , seeded and chopped
4 -6 garlic cloves , minced
1 lime ( zest and meat no bitter rind )
2 cans tomato paste
2 cups bottled lemon juice
1 tablespoon salt
1 cup sugar
1 tablespoon ground cumin
1/3 cup tequila , Anejo

Instructions

1.Preheat the grill to high heat.
2.Put tomatoes, red bell peppers, and onions on the grill, turning occasionally, until skin is blackened and charred, about 10 minutes.
3.Pulse chipotle chiles, jalapenos, garlic, and lime zest in a food processor until minced.
4.Add tomato paste, lemon juice, salt, sugar, and ground cumin and pulse until smooth.
5.Remove the blackened skin from the grilled vegetables and place them in the food processor with the other ingredients. Pulse until blended with a coarse texture.
6.Pour the blended mixture into a saucepan and stir in tequila. Bring to a boil and simmer on low heat for 20 minutes.
