Ingredients

12 anaheim chilies ( also good with other chile peppers )
1 package Velveeta cheese ( also good with other types of cheese )
3 eggs
1/2 cup flour
1 teaspoon salt
1/2 teaspoon pepper
12 egg roll wraps
1/4 cup oil
Mrs. Lopez's Chile Rellenos is a spicy, cheesy, and egg-y comfort food that is popular in Mexican-American cuisine. It is believed to have originated in the state of Puebla in Mexico and was introduced to the United States by Mexican immigrants. The chili rellenos are usually prepared by stuffing a long green chili pepper with cheese (sometimes with meat or other fillings), then battered and fried. The dish has since evolved, with egg roll wraps being used as a replacement for the traditional batter. Mrs. Lopez's version of the dish still holds its authenticity with use of anaheim chilies and Velveeta cheese. The dish is often served with salsa and guacamole on the side and a side of rice and beans to make it a filling meal.

Instructions

1.Preheat the oven to 350°F (180°C).
2.Wash and dry the anaheim chilies, then remove the stems. Cut a slit down the side of each chili and remove the seeds and membranes.
3.Cut the Velveeta cheese into sticks and insert one into each chili.
4.Separate the eggs, putting the egg whites in one bowl and the yolks in another. Beat the egg whites with an electric mixer until stiff peaks form.
5.In a separate bowl, mix the flour, salt, and pepper with the egg yolks and enough water to make a smooth batter.
6.Fold 1/3 of the beaten egg whites into the batter to lighten it. Then gently fold in the remaining egg whites.
7.One at a time, dip the stuffed chilies into the batter, making sure they are completely coated.
8.Place the egg roll wraps on a cutting board and brush each one with oil. Then roll each chili in a wrap and place the wrapped chilies in a baking dish.
9.Bake for 30-35 minutes, or until the egg rolls are golden brown. Serve hot.
