Ingredients

6 -8 tomatillos
1 jalapeno
1 lime
1 garlic clove
1 cup fat-free cottage cheese or 1 cup sour cream
fresh cilantro
1 chicken breast , cooked
9 -12 corn tortillas
1 cup low-fat jalapeno monterey jack cheese
1/4 cup sliced jalapeno ( optional )

Instructions

1.Preheat oven to 375°F and line a baking dish with parchment paper.
2.Remove husks from tomatillos and rinse thoroughly, then chop into bite-sized pieces.
3.Remove stem and seeds from jalapeño, and dice into small pieces.
4.In a food processor or blender, combine the chopped tomatillos and diced jalapeño, garlic clove, and juice from the lime. Blend until smooth, adding a little water if needed to thin out.
5.Add the cottage cheese or sour cream to the tomatillo mixture and blend until smooth.
6.Shred the cooked chicken with two forks and set aside.
7.Place a layer of corn tortillas in the prepared baking dish, using 3-4 tortillas to cover the bottom completely.
8.Pour about 1/3 of the tomatillo mixture over the tortillas, spreading it out evenly.
9.Add a layer of shredded chicken over the tomatillo mixture.
10.Repeat with another layer of tortillas and another 1/3 of the tomatillo mixture.
11.Add another layer of shredded chicken and top with a final layer of tortillas and the remaining tomatillo mixture.
12.Sprinkle the shredded jalapeño jack cheese over the top of the casserole.
13.Bake uncovered for 30-35 minutes, until cheese is melted and the casserole is heated through. Let cool for a few minutes before serving.
