Ingredients

2 tablespoons olive oil
1 onion
500 g fish fillets ( either fresh or frozen )
1/4 teaspoon sambal tjampoer ( or 1/4 teaspoon any very hot chili sauce )
2 tablespoons soya sauce ( extra , to taste )
3 tablespoons desiccated coconut
1/4 cup coconut meat ( large white chunks of coconut ) ( optional )
2 tablespoons sugar
2 teaspoons cornflour ( cornstarch )
1/4 teaspoon salt
1/3 cup tomato sauce
2 tablespoons white vinegar
1 tablespoon soy sauce
8 large tortillas
grated cheese , for topping

Instructions

1.Preheat the oven to 180°C (355°F).
2.Peel and chop the onion.
3.In a frying pan or wok, heat the olive oil.
4.Add the onion and fry until golden brown.
5.Add the fish fillets and fry for 5-10 minutes, depending on the thickness of the fillets. Cut them into small pieces.
6.Add the sambal tjampoer or any other very hot chili sauce, soya sauce, desiccated coconut, coconut meat (optional), sugar, cornflour, salt, tomato sauce, and white vinegar. Mix well and season with more soy sauce, to taste.
7.Place the tortillas on a flat surface and divide the fish mixture evenly over each tortilla.
8.Roll the tortillas up tightly and place them seam-side down in a lightly oiled baking dish.
9.Sprinkle grated cheese over the top of the tortillas.
10.Place in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
