Ingredients

3 -4 medium tomatoes
1 small white onion , chopped
2 garlic cloves
3 tablespoons vegetable oil
2/3 liter chicken broth or 2/3 liter vegetable broth
1 1 teaspoon parsley or 1 teaspoon cilantro
salt and pepper
4 dried pasilla peppers
1 cup monterey jack cheese , grated
1 avocado
1 cup sour cream
tortilla chips
Azteca (Tortilla Chip) Soup is a warm and comforting dish with roots in Mexican cuisine. The soup gets its name from the addition of tortilla chips as a garnish, which add both crunch and flavor to the dish. This recipe uses roasted vegetables to give the soup a depth of flavor, which is then complemented by the toppings of Monterey Jack cheese, avocado, sour cream, and tortilla chips. Instructions

1.Preheat oven to 375°F.
2.Place the tomatoes, onion, and garlic cloves on a baking tray and drizzle with 2 tablespoons of vegetable oil.
3.Roast for 20 minutes, or until the vegetables are soft and charred.
4.While the vegetables are roasting, heat the remaining tablespoon of vegetable oil in a pot over medium heat.
5.Add the chicken or vegetable broth, parsley or cilantro, salt and pepper to taste, and the pasilla pepper.
6.Simmer for 10 minutes.
7.Remove the pasilla pepper from the pot and discard the stem and seeds.
8.Puree the roasted vegetables with the broth in a blender or food processor until smooth.
9.Return the puree to the pot and simmer for an additional 10 minutes.
10.Ladle the soup into four bowls and top each with the grated Monterey Jack cheese, diced avocado, a dollop of sour cream, and crushed tortilla chips.
