1 teaspoon ground cumin
1 can black beans , rinsed and drained
1 can chipotle chiles in adobo , drained
1/2 teaspoon brown sugar
32 inches flour tortillas
8 ounces coleslaw mix
1/2 cup fresh cilantro , chopped
2 tablespoons lime juice

Instructions

1.Preheat the oven to 425°F (218°C).
2.Heat the canola oil over medium heat in a skillet. Add the onion and garlic and sauté until translucent for about 5 minutes. Add the black beans, cumin, and chipotle chiles in adobo, and brown sugar to the skillet. Stir to combine and cook for 5-8 minutes.
3.Lay one tortilla on a baking sheet, spoon a generous amount of the black bean mixture onto it, and spread it to the edges, leaving a 1/4 inch (6.5mm) border around the edges. Top with 2 ounces (56 grams) of coleslaw mix, then sprinkle with fresh cilantro and lime juice.
4.Top with another tortilla, and press to seal the edges. Repeat with the remaining tortillas and ingredients.
5.Bake in the oven for 5-8 minutes, until crispy.
6.Serve the clayudas hot, sliced and enjoy!
