10 flour tortillas

2 teaspoons minced chili peppers ( jalapeno or serrano )
1/4 teaspoon paprika
1/2 teaspoon salt ( optional )

Instructions

1.Rinse the pinto beans and add them to a large pot with 6 cups of water and a pinch of salt. Bring to a boil, reduce heat, and let simmer for 2-3 hours, or until tender.
2.While the beans are cooking, heat oil in a pan and add onions, jalapenos, and garlic. Sauté for a few minutes until onions are translucent.
3.Add cumin, chili powder, oregano, sea salt, and corn kernels. Cook for 10 minutes. Set aside.
4.After the beans are done cooking, add in the onion, garlic, tomato sauce, 2 cups of water, and chili peppers. Simmer over medium-low heat for 30 minutes.
5.Make the red chili gravy by heating oil in a pan and adding flour. Whisk for a few minutes until the mixture turns brown. Add in chili powder, paprika, salt, oregano, cayenne pepper, and water. Whisk until smooth and simmer for 10 minutes.
6.To assemble the burritos, spoon about ⅓ cup of the bean mixture onto a tortilla. Roll up and place seam side down on a baking dish. Repeat with remaining tortillas. Pour the red chili gravy on top of the burritos. Bake in the oven at 350°F for 15 minutes. Serve topped with green onions and cilantro (if desired).
