Ingredients

1/3 cup nopalitos
6 large eggs
1 tablespoon milk
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons butter
1 tablespoon canola oil
1/2 cup onion , finely chopped
2 garlic cloves , minced
1/2 cup chopped tomato
4 corn tortillas
2 teaspoons cilantro , minced

Instructions

1.In a bowl, whisk eggs adding milk and salt and pepper till combined
2.Heat butter and canola oil in a nonstick skillet on medium heat, add onion and sauté stirring occasionally, cook until onions are soft and translucent.
3.Add garlic to the skillet and cook for about a minute till fragrant
4.Add the chopped tomatoes and nopalitos; cook, stirring occasionally, until the nopalitos are heated through but still crispy.
5.Reduce skillet to low heat, add the egg mixture to the skillet, cook till scrambled approximately 3-4 minutes.
6.Warm the tortillas in the microwave or on the comal
7.Divide the egg and nopalitos mixture evenly between the tortillas. Sprinkle with minced cilantro, serve and enjoy!
