Ingredients

4 -6 slices bacon , chopped
1 onion , chopped
2 garlic cloves , grated
1 can rotel ( tomatoes and chilies )
1 can tomato sauce
1 1/2 quarts water
1/4 teaspoon Mexican oregano ( optional )
1/4 teaspoon cumin ( optional )
1/2 teaspoon salt ( to taste )
1/4 teaspoon pepper ( to taste )
4 -5 medium potatoes , peeled and diced
4 ounces Velveeta cheese , divided ( optional )

Instructions

1.Cook bacon in a large pot until crispy, remove and crumble.
2.In the same pot with bacon grease, sauté chopped onion and grated garlic until fragrant.
3.Add in rotel, tomato sauce, water, Mexican oregano, cumin, salt, and pepper. Stir and bring to a boil.
4.Reduce heat to low, add diced potatoes and simmer until potatoes are tender.
5.Add in half of the Velveeta cheese and crumbled bacon, stir until cheese is melted.
6.Serve hot with remaining cheese on the top of the soup.
