Ingredients

1/4 cup vegetable oil , divided
3 tablespoons lime juice
1 garlic clove , minced
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1 dash hot sauce
salt
fresh ground black pepper
1 1/2 lbs meat ( boneless , skinless chicken breast , skirt steak or peeled and deveined shrimp )
1 medium onion , halved and sliced lengthwise
1 green bell pepper , sliced
1 red bell pepper , sliced
8 flour tortillas
1 lime , juiced , for topping
1/2 cup sour cream , for topping
salsa , for topping
1/2 cup guacamole , for topping
1 cup cheddar cheese , shredded , for topping

Instructions

1.Preheat the oven to 350°F. Lightly grease a baking sheet and set aside.

3.Place the chicken, steak or shrimp in a large bowl. Add the onion, green and red peppers and pour the marinade over all.

5.Heat the remaining vegetable oil in a large skillet over medium-high heat. Once hot, add the marinated meats and veggies.
6.Saute everything for 7-10 minutes, or until the meat is cooked through and the veggies are tender.
7.In the meantime, warm the flour tortillas in the oven for 5-7 minutes. Once everything is ready, assemble the fajitas on individual plates.
8.Garnish each fajita with a squeeze of fresh lime juice, a dollop of sour cream, a spoonful of salsa, a scoop of guacamole and a handful of shredded cheddar cheese.
