1 lb ground beef

2 cans refrigerated biscuits ( do not use `` flaky '' or `` layer '' types )
1 head lettuce , shredded
2 ears corn on the cob ( fresh or frozen , prepared and removed from cob )
1 can black beans
1 tomatoes , diced
1 red pepper , diced
1 cup monterey jack cheese , shredded
1 cup sour cream ( optional )
1 cup salsa ( optional )

Instructions

1.Preheat oven to 375°F.
2.Brown ground beef and onion in a large skillet over medium-high heat.
3.Add 1 tablespoon olive oil and taco seasoning.

5.Separate the biscuits and flatten each into a 6-inch round.
6.Place each round in a greased muffin tin, forming a shell.

8.Spoon the mixture evenly into each biscuit shell and top with the reserved lettuce, corn, and tomatoes.
9.Cover each shell loosely with a sheet of Reynolds Wrap foil.
10.Bake for 25 to 30 minutes or until biscuits are golden brown.
