Ingredients

1 large white onion , chopped and 1/4 cup set aside for garnish
2 teaspoons olive oil
4 links fully cooked chipotle chicken sausage , cut into 1/4-inch slices ( organic preferred )
1 can organic no-salt-added diced tomatoes , such as Muir Glen brand , undrained
1/2 cup habanero flavored salsa
1/2 cup brewed coffee
2 teaspoons dried oregano , crushed ( preferably Mexican )
1 can organic no-salt-added kidney beans , undrained
1 ripe avocado , diced ( optional )
4 tablespoons fresh cilantro , chopped ( optional )
1 lime , cut into wedges ( optional )

Instructions

1.In a large pot, heat olive oil over medium-high heat.
2.Add chopped onion and sausage; cook and stir until onion is tender.
3.Add diced tomatoes, habanero flavored salsa, brewed coffee, dried oregano and kidney beans.
4.Bring to a boil, reduce heat and simmer for 20-25 minutes or until chili is thickened.
5.Serve with diced avocado, fresh cilantro, lime wedges and reserved chopped onion, if desired.
