Ingredients

3 large red bell peppers , roasted
4 large poblano peppers , roasted
4 jalapeno peppers , roasted ( Can use canned chipotle )
1/2 cup sun-dried tomato packed in oil
8 ounces jalapeno jack cheese , grated
10 burrito-size flour tortillas
20 large tiger shrimp , 16 ct. , shelled & deveined
2 tablespoons olive oil
1 ounce tequila
1 teaspoon salt
3/4 cup ricotta cheese
3/4 cup goat cheese
1 large head of garlic , roasted
1/2 cup fresh salsa
1/2 cup chopped fresh cilantro
Roasted Chiles, Goat Cheese and Prawn Roll-Ups is a Mexican inspired dish that bursts with amazing flavors. It's perfect for a quick appetizer and works well as a main dish too. The dish is made by roasting pepper and shrimp together, which is then wrapped in a soft tortilla filled with loads of goat cheese and seasoned with fresh cilantro. The dish is best served with a glass of Sangria or a light beer, making it the perfect summer recipe.

Instructions

1.In a bowl, combine ricotta cheese, goat cheese and roasted garlic, mix well.
2.Take a 12-inch flour tortilla and spread the cheese mixture over it.
3.Arrange the roasted peppers and grated jalapeno jack cheese on the tortilla.
4.Cut the shrimp into small bits and sprinkle over the cheese mixture.
5.Use a spoon to sprinkle tequila over the shrimp.
6.Roll up the tortilla tightly around the filling.
7.Lightly coat the pan with olive oil and heat on medium heat. Place the tortilla roll-up in the pan and cook until it turns golden brown.
8.Sprinkle fresh cilantro and, salsa over the tortilla roll-up. Cut into 2-inch pieces before serving.
