Ingredients

3 - 3 1/2 lbs pork shoulder , preferably with a good piece of bone in
1 quart water , with
1 teaspoon salt
3 bay leaves
1 large onion , diced
4 -5 garlic cloves , minced
2 cans white hominy , drained and rinsed
1 can yellow hominy , drained and rinsed
3 cans diced green chilies , undrained ( mild or hot )
1 teaspoon dried oregano
1 1/2 teaspoons ground cumin
1 teaspoon ground black pepper
2 teaspoons chili powder
1 teaspoon salt
Pozole, a rich and spicy soup made with pork and hominy, is a traditional Mexican dish enjoyed throughout the country. Typically made over several hours on the stove or in a slow cooker, this pressure cooker version allows for a faster and easier preparation without sacrificing any of the flavor. Instructions

1.Rinse and dry the pork shoulder, then trim any excess fat. Cut into 1.5 inch cubes.
2.In the pressure cooker, combine the water, salt, bay leaves, diced onion, and minced garlic. Add the pork shoulder cubes and stir to combine.
3.Set the pressure cooker to high pressure for 45 minutes, then allow for natural pressure release for 10 minutes before quick releasing the remaining pressure.
4.Remove the lid and skim off any excess fat or foam. Add in the drained and rinsed white and yellow hominy, canned diced green chilies, oregano, cumin, black pepper, chili powder, and additional salt to taste.
5.Stir until well combined, then replace the lid and cook on high pressure for another 15 minutes before allowing for natural pressure release for an additional 10 minutes.
6.Once the pressure has released, remove the lid and adjust seasoning as necessary. Serve hot with desired toppings such as sliced radishes, avocado, cilantro, and lime wedges.
