8 egg whites
3/4 cup sugar
1 lb ibarra chocolate , cut into small pieces
2 ounces ibarra chocolate , cut into small pieces
1/2 cup butter
1 tablespoon lemon juice
4 tablespoons orange liqueur ( such as Grand Marnier , Cointreau , or Triple Sec )
1 teaspoon vanilla

Instructions

1.Preheat the oven to 350 F (175 C).
2.Butter and flour a 9-inch cake pan.
3.Melt the 1 lb of ibarra chocolate in a double boiler over low heat.
4.In a separate bowl, whisk egg whites until stiff peaks form.
5.Gradually add sugar, whisking constantly until the mixture is shiny and stiff.
6.Fold in the melted chocolate, the remaining 2 ounces of chopped ibarra chocolate, butter, lemon juice, orange liqueur, and vanilla until fully combined.
7.Pour the batter into the prepared pan and bake for 25-30 minutes.
8.Let the cake cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
