Ingredients

2 fresh jalapeno peppers ( or 4 Serranos )
3 garlic cloves , unpeeled
1/2 cup finely chopped white onion
1 can diced tomatoes with juice , preferably fire roasted or 4 large tomatillos , husked , rinsed and quartered and roasted
1/3 cup loosely packed roughly chopped cilantro
1 teaspoon fresh lime juice ( or more )
salt , to taste

Instructions

1.Preheat the oven to 450 degrees F.

4.Once cooled, peel and stem the jalapenos and peel the garlic.
5.In a molcajete or medium-sized bowl, add the peeled jalapenos and garlic, onion, diced tomatoes, cilantro, and lime juice.
6.Sprinkle with salt and begin to mash the ingredients together using a molcajete or fork until desired texture is reached.
7.Taste the salsa and season with additional salt or lime juice, as desired.
