1/2 - 1 whole large onion , chopped
4 cups long grain rice
29 ounces whole tomatoes
10 ounces diced tomatoes and green chilies
1 teaspoon cumin

1/2 teaspoon cayenne pepper
1/4 teaspoon turmeric
6 -8 cups low sodium chicken broth
1 1/2 cups grated cheddar cheese

Instructions

1.Preheat the oven to 375ºF.

7.Remove the pot from the oven and sprinkle the grated cheddar cheese over the top of the casserole. Return the dish to the oven and bake, uncovered, for an additional 10-15 minutes or until the cheese is melted and bubbly.
8.Remove the casserole from the oven and let it rest for 10-15 minutes before serving. Garnish with fresh cilantro before serving.
