Ingredients

1 1/2 lbs tomatillos , husked , rinsed and cut into 1 inch pieces
3 garlic cloves , peeled and halved
3 -4 canned pickled jalapeno peppers , stemmed , halved and seeds scraped out
1/2 cup loosely packed roughly chopped fresh cilantro ( divided use )
salt
1 1/2 - 2 lbs boneless pork shoulder , cut into 1 inch cubes
1 tablespoon Worcestershire sauce
2 cans large white great northern beans , drained ( or 3 1/2 cups home cooked beans )
1/2 teaspoon sugar , if needed
Puerco En Salsa Verde, also known as Tomatillo Pork Braise with Pickled Chilis, is a traditional Mexican dish that is usually served with tortillas. Instructions

1.Preheat oven to 350 degrees F.
2.In a blender or food processor, combine tomatillos, garlic, jalapenos, 1/4 cup cilantro and 1/2 tsp salt. Blend to a coarse puree and set aside.
3.Using a heavy, oven-proof Dutch oven or pot, heat 2 tbsp oil over medium-high heat. Add pork and sauté until browned on all sides. Remove pork from Dutch oven and set aside.
4.In the same Dutch oven, add tomatillo puree and bring to a boil. Add Worcestershire sauce, 1/2 tsp salt and sugar if needed.
5.Add browned pork back to the Dutch oven, cover and bake for 1 1/2 to 2 hours until pork is tender.
6.Remove from oven and stir in beans, 1/4 cup cilantro and additional salt to taste.
7.Serve with your favorite toppings such as diced onions, avocado, lime wedges or sour cream.
