Ingredients

1/2 lb small shell pasta
3 tablespoons oil
2 medium onions , chopped
1 red bell pepper , seeded and chopped ( or use green bell pepper )
1 jalapeno pepper , seeded and finely chopped ( optional )
1 -2 tablespoon fresh minced garlic ( or to taste )
3/4 cup canned corn niblet
1 can diced tomatoes
3/4 cup salsa ( mild or medium )
1/2 cup black olives , sliced
2 tablespoons taco seasoning mix ( can use more )
1 can black beans
1/4 cup softened cream cheese ( can use more to taste )
salt and black pepper ( to taste )
1 1/2 cups grated cheddar cheese ( optional )

Instructions

1.Bring a pot of salted water to a boil and add shells pasta to it.
2.Cook pasta for about 7-8 minutes or until al dente.
3.Drain the pasta and set it aside.
4.Heat oil in a skillet over medium-high heat, add onions, red bell peppers, jalapenos, and garlic to it. Sauté until they turn soft.
5.Add corn niblets, canned tomatoes, salsa, olives, taco seasoning, and black beans. Mix it and cook for about 5 minutes.
6.Add cooked pasta to the mixture and mix it well.
7.Add cream cheese and stir until the cheese is melted.
8.Add salt and black pepper as per taste.
9.Top it with grated cheddar cheese (optional) and serve hot.
