Ingredients

1 1/4 cups packed fresh cilantro , plus 1/4 cup chopped
1/4 cup scant green onion , chopped
3 tablespoons fresh lime juice
2 garlic cloves , pressed
1 tablespoon jalapeno , chopped and seeded
1/2 cup plus 1 tb olive oil
1 lb linguine
1 lb uncooked medium shrimp , peeled and deveined
3 tablespoons tequila
1/4 cup Cotija cheese ( or feta )

Instructions

2.Cook the linguine in a large pot of boiling salted water. Cook according to package instructions or until al dente. Reserve 1 cup of pasta water, then drain and set aside.
3.While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp and cook until pink, which usually takes around 2-3 minutes on each side.
4.Remove the skillet from heat and add the tequila. Place back on heat and cook for another minute, or until the alcohol has evaporated.
5.Add the cooked pasta to the skillet and toss with the shrimp. Add the Cilantro-Lime Pesto and the reserved pasta water to the pan and toss everything together until the pasta is coated evenly. Add salt and pepper to taste.
6.To serve, divide the pasta into four plates and top each one with crumbled Cotija cheese or feta. Enjoy!
