Ingredients

1 lb ground beef
1/2 cup onion , chopped
1 medium potato , diced
2 carrots , diced
1 can tomato sauce
1 can red kidney beans , undrained
1 can white beans , undrained
1 can corn , undrained
2 cans Rotel Tomatoes or 16 ounces tomatoes , undrained
2 ounces taco seasoning , packets
1 1/2 cups water
1/4 cup abc noodles , small ones ( optional ) or 1/8 cup acini di pepe pasta ( optional )
salt & pepper , to taste

Instructions

1.In a large pot, brown the ground beef over medium heat.
2.Add in the chopped onion, diced potato, and diced carrots, stirring occasionally.
3.Pour in the tomato sauce, undrained red kidney beans, undrained white beans, undrained corn, Rotel tomatoes or tomatoes and taco seasoning to the pot, stir well to combine.
4.Pour in the water, salt and pepper, and ABC noodles or Acini di Pepe pasta, if using. Stir well.
5.Bring the soup to a boil, then lower the heat and let it simmer for at least 15 minutes, until the vegetables are tender.
6.Ladle soup into bowls and top with cheese, a dollop of sour cream, and crushed Fritos corn chips.
