Ingredients

1 cup long-grain white rice
3 cups water
3 inches cinnamon sticks or 1 teaspoon ground cinnamon
1 tablespoon very fine julienne strips lime peel ( optional )
1 pinch salt
4 cups milk ( or for richer pudding substitute 1 can of evaporated milk and add enough regular milk to equal 4 cup )
1 egg
1 1/2 cups sugar , to taste
1/3 cup raisins
1 teaspoon vanilla extract

Instructions

1.Rinse the rice under cold water and drain well.
2.In a medium saucepan, bring 3 cups of water to a boil over medium-high heat. Add the rice, cinnamon sticks (or ground cinnamon), lime peel (if using), and salt, and stir well. Reduce the heat to low and simmer, covered, for about 18-20 minutes or until the rice is tender and the water is absorbed.
3.Add the milk, beaten egg, sugar, raisins, and vanilla extract, and stir to combine. Cook over medium heat, stirring constantly for about 20-30 minutes or until the mixture thickens (the pudding will continue to thicken as it cools).
4.Turn off the heat and remove the cinnamon sticks (if used). Let the pudding cool to room temperature, stirring occasionally to prevent a skin from forming on top. Alternatively, transfer the pudding to an airtight container and chill in the refrigerator for at least 2 hours before serving.
