1 2/3 cups unbleached all-purpose flour
2 1/2 cups cornstarch
1/2 teaspoon baking soda
2 teaspoons baking powder
1 cup unsalted butter , softened
3/4 cup white sugar
3 egg yolks
1 teaspoon vanilla rum
1/2 teaspoon vanilla extract
1/2 teaspoon lemon extract
2 teaspoons lemon zest
1 jar dulce de leche
1/2 cup unsweetened shredded coconut
Alfajores are a traditional cookie that originated in Spain and then spread to Latin America. Instructions

1.In a bowl, mix all-purpose flour, cornstarch, baking soda, and baking powder. Set aside.
2.In another bowl, cream butter and sugar until fluffy.
3.Gradually add egg yolk, vanilla rum, vanilla extract, lemon extract, and lemon zest while beating.
4.Add the dry mixture to the wet mixture in 2-3 parts until thoroughly combined.
5.Knead dough gently then refrigerate for 30 minutes.
6.Preheat oven to 350°F (175°C).
7.Roll out the dough flat. Use a round cookie cutter to cut out the dough and transfer them to a parchment-lined baking sheet.
8.Bake for 10-12 minutes. Please note that it's important not to overbake the cookies to keep their soft texture.
9.Let it cool. Spread dulce de leche on one cookie and sandwich it with another one. Press gently.
10.Roll the sides in shredded coconut.
11.Serve and enjoy!
