1/4 cup pickled jalapeno pepper , drained
sour cream , for topping

Instructions

1.Heat about 1/2 inch of oil in a deep skillet over medium-high heat. Once hot, add 1 tortilla at a time and fry for about 1-2 minutes on each side or until golden and crispy. Season both sides with salt and pepper and transfer to a paper towel to drain.
2.In a large skillet, cook the ground chuck over medium-high heat while breaking it into small pieces with a wooden spoon. After about 5 minutes of cooking, add the onion, jalapeno peppers, and garlic to the skillet. Continue cooking for about 5 minutes or until the meat is browned and the onion is softened.
3.Add chili powder, ground cumin, and ground coriander to the meat mixture. Stir and cook for about 1 minute until fragrant.
4.Stir in tomato paste, beef stock, and chopped tomatoes. Let it simmer for about 5 minutes or until the sauce thickens.
5.In a small saucepan, melt butter over medium heat. Add flour and stir until combined. Gradually pour in milk while whisking continuously. Cook for about 5 minutes or until the sauce thickens.
6.Preheat the oven to 375°F and line a baking sheet with parchment paper.
7.Break or cut the fried tortillas into bite-sized pieces and arrange them on the baking sheet. Top with the meat mixture, followed by the cheesy sauce, shredded cheddar cheese, and pickled jalapeno peppers.
8.Bake for about 10-15 minutes or until the cheese is melted and bubbly. Serve hot with a dollop of sour cream.
